1 (14 Oz) Can Chickpeas (Drained & Rinsed)
1/3 Cup Yellow Onion (Roughly Chopped)
1/2 Cup Walnuts (Toasted)
1/2 Cup Oats
2 Cloves Garlic (Peeled)
1 Cup Brown Rice (Cooked)
2 TBSP Tomato Ketchup
1 TBSP Soy Sauce
2 TSP Chili Powder
1/2 TSP Salt
1/2 TSP Ground Black Pepper
In the bowl of a food processor, combine the chickpeas, onion walnuts oat and garlic until a course meal is formed.
Transfer mixture to a large glass mixing bowl and add the ketchup, rice, soy sauce, chili powder, salt and pepper, stir until well mixed.
Form meatball mixture into 1" thick meatballs and fry in a skillet on medium heat until golden brown on all sides.
If not using immediately, meatballs will stay fresh in an airtight container in the refrigerator for 3 days or up to 2 weeks in the freezer.
