Chickpea Chicken Recipe.


Ingredients:


3/4 Cup Chickpeas (Drained)
1/4 Cup Nutritional Yeast
1 TSP Garlic Powder
1 TSP Onion Powder
1 TSP Dried Thyme
1/2 TSP Ground Coriander
1/4 TSP Dried Sage
2 TSP Poultry Seasoning
1 TBSP Dijon Mustard
3/4 Cup Plant-Based Chicken Stock
1 1/2 Cup Wheat Gluten


Recipe Instructions:


In the bowl of a food processor, add chickpeas, nutritional yeast, garlic powder, onion powder, thyme, coriander, sage, poultry seasoning and Dijon mustard as well as the chicken stock and process until well combined and mixed.
Pour mixture into a large glass mixing bowl and add the wheat gluten, stir a few times with a spoon then knead with hands until a slightly firm dough begins to form.
Transfer dough mixture to a cutting board and flatten out before cutting in to 4 equal pieces.
Wrap in aluminum foil loosely and place into a steamer for roughly 30 minutes.
Let chicken filets cool for a few minutes before unwrapping from foil and cutting lengthways down the middle so that you have 8 chicken fillets.
Sprinkle filets with chicken spice and rub generously with fingers.
Filets can be cooked in a skillet immediately or stored in an airtight container in the refrigerator for up to 5 days.
