2 Lbs Old Potatoes (Peeled and Cut into Sticks)
Pinch of Salt
Vinegar
Place the cut potatoes in a large glass bowl of cold water to allow the starch to seep out.
Drain and pat dry the potatoes before frying.
Heat oil in a large pan and place the chips in the heated oil, fry until the chips are lightly golden-brown in color.
Remove chips from the pan and allow to drain on a kitchen paper lined plate.
Just before serving the chips, reheat the oil and fry the chips again until they turn fully golden-brown.
Serve immediately with a few dashes of malt vinegar and a sprinkling of salt.
