Chorizo And Egg Skillet Recipe.


Ingredients:


6 Oz Chorizo (Casings Removed)
1/2 Cup Onion (Diced)
6 Eggs
Pinch of Salt
Pinch of Ground Black Pepper
1 TBSP Fresh Cilantro (Chopped)


Recipe Instructions:


Over a medium-low heat, place the chorizo in a skillet, cooking for 5 minutes, breaking up the sausage meat as it cooks.
Stir in the chopped onions and continue to cook the mixture for another 5 minutes until the chorizo is crispy.
In a small glass bowl, crack the eggs and add the salt and pepper, whisk until combined.
Remove the chorizo pan from the heat and allow to cool slightly, removing any excess fat from the pan.
Place skillet back on the heat and pour in the eggs and continue to stir the eggs into the chorizo and onion mixture until the eggs have thickened.
Add the fresh cilantro and stir into the mixture, remove from the heat, allow to cool and serve with country potatoes or in warmed tortillas.
