8 Oz Water
4 Oz Butter (Room Temperature, Cubed)
5 Oz All Purpose Flour (Sifted)
4 Eggs
1/2 TSP Salt
1 TBSP White Sugar
1/2 TSP Vanilla Extract
In a medium pan over medium heat, add the salt, water, sugar and butter and bring to a boil, once water mixture is boiling, add the flour in one go with the pan off the heat and vigorously mix the flour so it absorbs all of the water quickly.
When the flour has absorbed all of the water, return the pan to the stove on medium heat and cook for 2 minutes while constantly stirring the mixture until a dough forms that pulls away from the side of the pan.
Transfer the dough to a clean, large glass bowl and allow to cool slightly.
Add the vanilla extract and stir vigorously to combine.
Using a hand mixer, add the eggs one at a time and mix well after adding each one until the egg is incorporated evenly in the dough.
Transfer the dough to a piping bag and use immediately as required.
