6 Orange Slices
6 Lime Slices
6 Salmon Fillets
1 LB Fresh Asparagus (Trimmed and Halved)
1 TBSP Olive Oil
1/2 TSP Salt
1/2 TSP Ground Black Pepper
2 TBSP Parsley (Minced)
3 TBSP Fresh Lemon Juice
Preheat the oven to 425 degrees.
Cut 6 pieces of parchment paper into squares big enough that there will be 3-4 inches of space around the salmon fillets when placed in the center.
Fold parchment paper in half and arrange 1 piece of orange and lime on each side.
Place the a salmon fillet on top of the citrus fruit then top the salmon with asparagus.
Drizzle a small amount of olive oil on top of the asparagus, sprinkle with salt and pepper and a little lemon juice.
Fold parchment paper over the fish to create a sealed envelope, ensuring the edges are tightly sealed.
Place parchment paper envelopes on a baking sheet and bake in the preheated oven for 15 minutes.
To serve, place a fish envelope on the plate and carefully tear open.
