Citrus Scallop Ceviche Recipe.


Ingredients:


1/2 LB Scallops (Bay Scallops Work Best)
2 TBSP Fresh Lime Juice
2 TBSP Fresh Lemon Juice
1 Red Chili (Finely Chopped)
1/4 Cup Red Onion (Finely Chopped)
2 TBSP Fresh Cilantro (Finely Chopped)


Recipe Instructions:


Chop the fresh scallops into small pieces, about 1/2" in size.
Place into a medium glass bowl along with the lemon and lime juice and diced chili, mix until combined and well coated and place bowl in the refrigerator for 2-3 hours until scallops turn opaque.
Remove from refrigerator, add chopped onion and cilantro, mix well and serve immediately with your choice of fried plantains, tortilla chips or toasted bread triangles.
