1 TSP Canola Oil
1/2 Cup Yellow Onion (Chopped)
1/2 TSP Fresh Ginger (Grated)
3 Cups Apples (Peeled and Chopped Small)
1/2 TSP Apple Cider Vinegar
2 TSP Agave Syrup
1/4 TSP Ground Cinnamon
1/4 TSP Curry Powder
Pinch of Salt
In a large, heavy bottomed pot, bring the oil up to a medium heat, add the onions and ginger and saut? For 3 minutes until fragrant and soft.
Add the apples, apple cider vinegar, agave syrup, cinnamon, curry powder and salt to the pot, reduce heat to low, stir and cover for 15-20 minutes until the apples have turned soft and are beginning to break down.
If there is extra liquid after 20 minutes, remove the pot lid and allow to cook for a few more minutes to evaporate the excess liquid.
Remove from heat and cool.
