2 Cups Heavy Cream (Not Ultra-pasteurized)
Pour cream into a shallow casserole dish, cream should only come up the sides of the dish about 1 inch.
Place cream in the oven for 12 hours, uncovered, overnight is best.
After heating for 12 hours, carefully remove dish from the oven and allow to cool at room temperature.
Once cooled, cover the dish and refrigerate overnight.
After chilling overnight, skim the layer of clotted cream from the surface of the dish and place into a medium glass bowl.
Gently stir the clotted cream to create your desired texture.
Place clotted cream into an airtight container and store in refrigerator for up to 7 days.
