1/2 LB Fresh Halibut
1 Red Bell Pepper (Minced)
1/2 Red Onion (Minced)
1 Mango (Minced)
1 TBSP Fresh Cilantro (Finely Chopped)
1/2 Cup Fresh Lime Juice
2 TBSP Full Fat Coconut Milk
1/4 TSP Thai Green Curry Paste
1/4 TSP Fish Sauce
1/4 TSP Salt
1/4 TSP Ground Black Pepper
Dice the halibut into bit sized pieces and place into a medium glass bowl, cover the fish pieces with fresh lime juice until fully submerged.
Place bowl in refrigerator for 1 hour.
Once the halibut has turned opaque, strain the fish from the liquid and place into a clean medium glass bowl.
Add the minced chili, bell pepper, onions and mango and mix together to combine thoroughly.
Add a drizzle of coconut milk, just enough to give the mixture a nice even coating.
Add green curry paste, fish sauce, salt and pepper then fold in the fresh chopped cilantro.
Toss mixture in the bowl to mix and serve.
