2 Cups Celery (Thinly Sliced)
2 TBSP Butter
1 1//2 Cups Green Onions (Sliced)
1 1/2 LBS Hot Dogs
2 Large Eggs
1 1/2 Cup Whole Milk
2 TSP Dried Sage
1/4 TSP Ground Black Pepper
2 (85 Oz) Packages of Cornbread Mix
2 Cups Sharp Cheddar Cheese (Shredded)
In a small skilled over medium heat, saut? The celery in the butter for about 5 minutes until it begins to turn translucent and softens.
Add the onions and saut? The mixture for another 5 minutes.
Place mixture in a large glass bowl and set aside.
Preheat oven to 400 degrees.
Cut the hot dogs into 1/2 inch slices.
In the same skillet, saut? Hot dogs until lightly browned for about 5 minutes, add the hot dogs to the bowl with the vegetables in it.
Reserve 1 cup.
In a large glass bowl, whisk the eggs, milk, sage and pepper.
Add the hot dog mixture, stir in the cornbread mixes.
Add 1 1/2 cups of cheese and spread mixture into a shallow 3 quart baking dish, top with the remaining 1 cup of the hot dog mixture.
Bake in the preheated oven, uncovered, for 30-40 minutes or until the top is golden brown.
Serve warm or let cool and serve at room temperature.
