1 TBSP Unsalted Butter
4 Eggs (Beaten)
1/4 Cup Cottage Cheese
Pinch of Ground Black Pepper
In a skillet, over medium heat, melt the butter.
Once butter has melted pour in the beaten eggs and allow to cook undisturbed until the bottom of the eggs begin to get firm 2-3 minutes.
Stir the cottage cheese into the eggs and season with ground black pepper, continue to cook on medium heat stirring continuously until the eggs are nearly set, roughly 3-4 minutes longer.
Serve hot.
