3 TBSP Butter (Unsalted)
1 Yellow Onion (Finely Diced)
3 TBSP All Purpose Flour
3 Cloves of Garlic (Minced)
1 TSP Salt
1/2 TSP Ground Black Pepper
1/2 TSP Ground Cayenne Pepper
1 TSP Mustard Powder
2 Cups Whole Milk
2 Cups Ham (Cooked and Cubed)
1 1/2 LBS Yukon Gold Potatoes (Sliced 1/4" Thick)
2 Cups Cheese (Shredded)
Preheat oven to 350 degrees and grease and 8x8 baking dish with coconut cooking spray and set aside.
In a skillet over medium heat, add the onions and saut? Until translucent, add flour and stir until all of the onion is coated, continue to cook for 2 minutes then add the garlic, salt, pepper, cayenne and ground mustard powder, stir a couple of times to evenly distribute.
Slowly add the milk to the skillet, whisking to combine as it gets poured into the pan, cook for 2-3 minutes until the mixture begins to thicken.
Remove the pan from the heat.
Place a layer of the cooked and cubed ham in the bottom of the baking dish, then add a layer of the sliced potatoes, overlapping each row slightly.
Add roughly 2/3 cup of the onion and milk sauce.
Repeat the layer process until all the ingredients are used, finally, top with a layer of shredded cheese, cover with aluminum foil and bake in the oven for 1 hour.
After 1 hour, remove the aluminum foil, turn on the broiler and cook until the cheese is golden brown and bubbling, remove from the oven and serve hot or allow to cool and serve at room temperature.
