2 TBSP Olive Oil
1/4 Cup Red Onion (Finely Diced)
1 Clove Garlic (Minced)
1 Cup Vegetable Broth
1/2 TSP Dried Basil
1 Cup Couscous
2 Cups Cherry Tomatoes (Halved)
1/4 Cup Feta Cheese (Crumbled)
1 TBSP Fresh Lemon Juice
1 TBSP Fresh Parsley (Finely Chopped)
1 TBSP Fresh Basil (Finely Chopped)
In a large pan over medium heat, add the olive oil and onion and cook until the onion is translucent, about 6-7 minutes.
Add the vegetable broth, dried basil and a pinch of salt, bring to a rolling boil.
Stir in the couscous, cover, remove from heat and allow to stand for 5-10 minutes.
Stir in the tomatoes, lemon juice and crumbled feta cheese, garnish with the fresh basil and parsley, serve immediately.
