1 1/2 Cups Black Beans (Cooked, Drained and Rinsed)
1 1/2 Cups Black-Eyed Peas (Cooked, Drained and Rinsed)
2 Cups Cherry Tomatoes (Halved)
1 Cup Corn Kernels (Drained and Rinsed)
1 Red Bell Pepper (Stemmed, Seeded and Diced)
1/2 Cup Red Onion (Diced)
1 Jalapeno (Deseeded and Finely Chopped)
1 Lime (Zested and Juiced)
2 Avocados (Pitted, Peeled and Diced)
1/4 Cup Fresh Cilantro (Chopped)
For Dressing
2 TBSP Red Wine Vinegar
2 TBSP Olive Oil
1 TSP Ground Cumin
1/2 TSP Cayenne Pepper
1/4 TSP Honey
1 Clove of Garlic (Minced)
1 TSP Salt
1 TSP Ground Black Pepper
In a large glass bowl stir together the black beans, black-eyed peas, tomatoes, corn, bell pepper, onion, jalapeno, lime zest and lime juice until evenly combined.
In a medium glass bowl, whisk together the red wine vinegar, olive oil, cumin, cayenne, honey, garlic, salt and pepper until emulsified.
Pour the dressing over the bean mixture and stir to combine, fold din the avocado and cilantro, adjust seasonings if required and place in refrigerator for 1 hour or until ready to serve.
