Creamy Chicken Florentine With Spinach Recipe.


Ingredients:


2 Chicken Breasts (Boneless, Skinless)
1/4 Cup Dry White Wine
1/2 Cup Heavy Whipping Cream
1/4 Cup Cream Cheese (Softened)
1 1/2 TBSP Olive Oil
1 Clove Garlic (Minced)
1/4 LB Mushrooms (Sliced)
1 Cup Fresh Spinach


Recipe Instructions:


Place a non-stick, medium skillet over medium-high heat and add 2 TSP of olive oil to coat the pan.
Place the chicken in the pan and turn heat to medium, cook each side of the chicken for 8-10 minutes until the internal temperature reaches 160 degrees.
Remove the chicken to a plate and cover with aluminum foil
Pour 2 TSP of oil into the same pan and add the sliced mushrooms and garlic, stirring as they cook for about 4 minutes.
Add the dry white wine to the pan, stir to mix.
Next, add the baby spinach leaves to the pan with the mushrooms and stir until just starting to wilt.
Once spinach begins to wilt, push all of the ingredients to one side of the pan and turn the heat to medium-low, add the cream cheese and heavy cream to the pan and stir until melted and beginning to thicken.
Season to taste with salt and pepper and mix with the spinach and mushroom, spoon over the chicken breasts and serve warm with cauliflower rice or a side salad.
