Creamy Kidneys Recipe.


Ingredients:


For Kidneys
2 LBS Calf Kidneys (2 Pieces, Cleaned of Fat)
1 Oz Butter
1/2 TSP Salt
1/2 TSP Ground Black Pepper
For Sauce
2 Oz Butter
2 Yellow Onions (Sliced)
8 Oz Cream
1/4 Cup Cream Cheese
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


Slice kidneys into bite sized pieces then place kidneys into a strainer and rinse thoroughly with cold water.
Add salt to a large bowl add a little water and stir until salt dissolves.
Add kidney pieces and enough water to cover.
Cover bowl with plastic wrap and place in refrigerator for 3 hours.
After 3 hours, place kidneys into a strainer and rinse with cold water once again, let kidneys drip off excess liquid.
In a large skillet on low heat, place butter and begin to melt, add kidney pieces and cook for about 8 minutes while stirring occasionally.
Remove kidneys from skillet and set aside.
In the same skillet, add extra butter, sliced onions and cook for 6 minutes until translucent.
Add the cream cheese, cream and stir until combined, on a low heat cook for an additional 10 minutes.
Add salt and pepper to the sauce and stir.
Finally, add the cooked kidneys to the sauce and let them simmer in the sauce for another 3-4 minutes.
Serve immediately on their own or over cooked rice or pasta.
