For Venison Nuggets
1 Pound Venison (Cut into Chunks)
1 Large Egg
1 TBSP Milk
2 TBSP Lard
For Breading
1/2 Cup Grated Parmesan Cheese
1/2 Cup Crushed Pork Rinds
1/2 TSP Salt
1/2 TSP Ground Black Pepper
Combine the pork rinds, parmesan cheese, salt and pepper in a medium sized glass bowl and mix to combine, set aside.
Beat 1 egg and milk in a medium glass bowl, set aside.
Dip chunks of the venison into the egg mixture, then into the breading and place on a parchment paper lined baking sheet.
Once all the venison chunks have been breaded, place the baking sheet in the freezer for 30 minutes.
Heat the lard in a skillet over high heat until it reaches a temperature of 325 degrees.
Working in batches, fry the venison nuggets until browned, about 3-4 minutes.
Transfer cooked nuggets to a paper towel lined plate, season as needed and serve warm.
